Wheat-Pumpkin Muffins
- 1 12 cups whole wheat flour
- 1 teaspoon pumpkin pie spice
- 34 teaspoon baking powder
- 12 teaspoon baking soda
- 12 teaspoon salt
- 2 eggs
- 34 cup mashed cooked pumpkin (or canned pie filling)
- 12 cup firmly packed brown sugar
- 12 cup chopped walnuts
- 12 cup raisins
- 12 cup vegetable oil
- 12 cup honey
- Combine flour, pumpkin pie spice, baking powder, soda, and salt in a large mixing bowl.
- Combine remaining ingredients in a medium mixing bowl; stir well.
- Add to dry ingredients; stir just until dry ingredients are moistened.
- Spoon batter into paper-lined muffin cups, filling two-thirds full.
- Bake at 400 degrees F. for 18 to 20 minutes.
- Serve muffins hot.
