Heavenly Cherry Cake(Makes 15 Servings)
- 1 yellow cake mix
- 2 1/4 c. milk
- 1 (20 oz.) can crushed pineapple
- 1 c. sugar
- 1 (6 oz.) box instant vanilla pudding
- 1 (8 oz.) pkg. cream cheese, softened
- 4 large bananas, sliced
- 1 c. coconut
- 1/2 c. chopped maraschino cherries
- 1 (12 oz.) carton frozen whipped topping, thawed
- 1/2 c. chopped pecans
- Mix cake mix according to directions, except substitute 1 cup milk for water.
- Bake in a greased and floured 9 x 13 x 2-inch pan. Bring pineapple and sugar to boil and then simmer 3 minutes; cool. When cake has cooled, punch holes in the top and gradually pour pineapple mixture over top.
- With electric mixer, beat pudding mix and 1 1/4 c. milk; add cream cheese, beating well.
- Spread pudding over cake; top with bananas, 1/2 cup coconut and 1/4 cup cherries. Spread whipped topping over top.
- Sprinkle with remaining coconut, cherries and pecans.
- Chill.
