Vegetarian Mexican Pizza
- 1 whole Pizza Crust
- 1 can (16 Oz. Size) Refried Beans
- 1/2 Onion, Chopped
- 1/2 cups Taco Sauce
- 1 cup Shredded Mexican Cheese Blend
- 1 teaspoon Chili Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Dried Cilantro
- 2 Roma Tomatoes, Sliced
- Preheat oven to 500 degrees F.
- Spread crust over baking sheet.
- Spread with beans.
- Layer onions over beans and spread on taco sauce.
- Add cheese and sprinkle with chili powder, cumin, and cilantro.
- Arrange tomato slices over pizza and bake for about 10 minutes or until cheese is melted and crust is crispy.
- Optional toppings: salsa, reduced fat sour cream, shredded lettuce.
- Note: I like to use whole wheat pizza crust.
- Make your own favorite or for a quick meal, use a store-bought crust.
