Toasted Sesame Quinoa Bars

  1. Line 9 inch pan with foil.
  2. In large skillet, toast quinoa and sesame seeds.
  3. Transfer to a large bowl and allow to cool.
  4. To the quinoa, add oats, dates, apricots and salt.
  5. Stir in tahini, honey and vanilla until blended.
  6. Press mixture into prepared pan and refrigerate for at least 30 minutes.
  7. Peel off foil and cut into 16 bars.
