Toasted Sesame Quinoa Bars
- 34 cup quinoa, rinsed
- 14 cup sesame seeds
- 4 cups large flake rolled oats
- 34 cup pitted dates, chopped
- 34 cup chopped dried apricot
- 14 teaspoon fine sea salt
- 1 cup tahini
- 12 cup liquid honey
- 2 teaspoons vanilla extract
- Line 9 inch pan with foil.
- In large skillet, toast quinoa and sesame seeds.
- Transfer to a large bowl and allow to cool.
- To the quinoa, add oats, dates, apricots and salt.
- Stir in tahini, honey and vanilla until blended.
- Press mixture into prepared pan and refrigerate for at least 30 minutes.
- Peel off foil and cut into 16 bars.
