Buttery Peanut Brittle Recipe

  2. Combine sugar, corn syrup and water; cook slowly till sugar dissolves and syrup boils.
  3. Blend in butter.
  4. Stir constantly.
  5. When mix reaches 235 , (soft ball stage on candy thermometer), add in rawpeanuts and salt.

  7. Continue to stir.
  8. When mix reaches 280 , remove from heat, stir in baking soda.
  9. 3.
  10. Pour into well greased jelly roll pan or possibly 2 cookie sheets.
  11. Break into pcs when cold.
  12. Makes 2 1/2 pounds of candy.
  13. For cashew brittle, substitute 2 c. unsalted cashews.
