Buttery Peanut Brittle Recipe
- 1 c. Corn syrup, light
- 2 c. Sugar, granulated
- 1/2 c. Water
- 1 c. Butter
- 2 c. Peanuts, raw
- 2 tsp Baking soda
- 1/2 tsp Salt
- 1.
- Combine sugar, corn syrup and water; cook slowly till sugar dissolves and syrup boils.
- Blend in butter.
- Stir constantly.
- When mix reaches 235 , (soft ball stage on candy thermometer), add in rawpeanuts and salt.
- 2.
- Continue to stir.
- When mix reaches 280 , remove from heat, stir in baking soda.
- 3.
- Pour into well greased jelly roll pan or possibly 2 cookie sheets.
- Break into pcs when cold.
- Makes 2 1/2 pounds of candy.
- For cashew brittle, substitute 2 c. unsalted cashews.
