Cider Cooked Chicken

  1. Wash and dry chicken.
  2. Sprinkle inside and out with salt and pepper.
  3. Sprinkle apples with lemon juice.
  4. Heat 1/2 the butter and all the oil in heavy skillet.
  5. Add 1/2 the apples.
  6. Saute 5 minutes, until browned.
  7. Add ginger.
  8. Stuff chicken with apples; tie or skewer chicken cavity closed.
  9. Add remaining butter to pan. Brown chicken slowly on all sides.
  10. Place chicken in heavy casserole with lid.
  11. Add uncooked apples, green onions, thyme, cinnamon (if used), cloves and sugar to skillet.
  12. Saute 2 minutes. Add cider; heat to boiling.
  13. Pour over chicken.
