Quinoa Burgers

  1. Soak quinoa in bowl of cold water for about five minutes and then drain.
  2. Add the quinoa and water to a medium saucepan, bring to a boil, then reduce to a simmer and cover.
  3. Cook until water evaporates, about 7-8 minutes.
  4. Add quinoa, black beans, corn, red onion, garlic, jalepeno, and bread crumbs into a bowl and combine.
  5. Add salt, pepper, and cumin to taste.
  6. Add 1 egg and mix until completely combined.
  7. Add additional egg if more binder is necessary.
  8. Add oil to a medium frying pan.
  9. Fry each burger until lightly browned, about 3 minutes each side (be careful flipping these burgersthey can get a bit messy!
  10. ).
  11. Assemble burgers on whole wheat buns with sliced avocado and your preferred condiments.
  12. Enjoy!
