Hawaiian Chicken Nachos

  1. Preheat oven to 350 degrees.
  2. In a small saucepan over medium high heat, combine the pineapple juice, brown sugar, and teriyaki sauce.
  3. Dissolve the cornstarch in the water and add to the saucepan.
  4. Bring to a boil, stirring until thickened.
  5. Mix the shredded chicken with the sauce until chicken is evenly coated.
  6. Place half of the chips in an oven safe baking dish; cover with layers of half of the cheese, chicken, pineapple, and onion.
  7. Repeat layers.
  8. Bake for 10 minutes.
  9. Top with crumbled bacon, jalapeno slices, and cilantro.
  10. Serve immediately.
