Kasha Breaded Chicken Cutlets
- 4 boneless chicken breast halves
- 12 cup buckwheat groats (kasha medium granulation)
- 14 cup breadcrumbs (any style you like)
- 14 cup wheat germ
- 12 teaspoon salt
- 2 tablespoons olive oil
- 2 eggs, beaten
- 1 -2 garlic cloves (optional) or 14 teaspoon garlic powder (optional)
- 14 teaspoon black pepper (optional)
- Pound chicken to flatten (don't over do it).
- Mix toghter buckwheat, breadcrumbs & wheat germs.
- Add salt & pepper to kasha & bread crumbs mix.
- Dip chicken into beaten eggs and then coat with kasha & bread crumbs mix.
- In a large skillet, heat oil over medium heat.
- Saute crushed garlic until golden (you can then discard garlic if you like).
- Instead of crushed garlic you can add 1/4 teaspoon garlic powder to the kasha & bread crumbs mix.
- Place chicken in skillet cook about 5 minutes on each side, or until chicken is golden/brown on both sides.
- Actual cooking time will vary depending on how thick your chicken is, make sure cutlet is fork tender.
