Spinach Lasagne
- 1 pkg. spaghetti sauce mix
- 1 (6 oz.) can tomato paste
- 1 (8 oz.) can tomato sauce
- 1 3/4 c. cold water
- 2 eggs
- 1 (15 oz.) cottage cheese
- 2 tsp. salt
- 1 (10 oz.) frozen spinach, thawed, chopped and drained
- 1/4 c. Parmesan cheese
- 1/2 lb. Mozzarella cheese
- 1/2 lb. uncooked lasagne noodles
- Mix the first four ingredients; beat until well blended.
- Mix eggs, cottage cheese, salt and spinach.
- Cover bottom of a 9 x 13-inch pan with a little tomato sauce mixture.
- Layer the lasagne noodles, cheese mixture, 1/2 Mozzarella cheese, tomato sauce mixture and repeat.
- Top with Parmesan cheese.
- Bake at 350u0b0 for 1 hour.
- This may be made the day before.
