Bacon Dressing
- 4 slices bacon
- 1 tbsp. mustard
- 1 clove garlic
- 1 shallot
- 1/4 cup balsamic vinegar
- Bacon pieces
- 3/4 cup canola
- olive oil
- 1 dash sugar
- 1 dash chopped thyme
- Chop, cook, cool, strain and reserve fat from bacon.
- In a food processor, combine mustard, garlic, shallot, vinegar, and bacon.
- Puree to smooth consistency, slowly adding canola or olive oil as necessary.
- Finally, add bacon fat, sugar and thyme.
