Tofu Chili With Beans
- 3 cans pinto or kidney beans
- 1 block firm tofu, frozen and thawed
- 1/4 c. soy sauce
- 2 Tbsp. peanut butter
- 1 1/2 Tbsp. tomato paste
- 1/2 Tbsp. onion powder
- 1/4 tsp. garlic
- 1/2 c. water
- 2 Tbsp. oil
- 1 large green pepper
- 2 large onions, diced
- 3 cloves garlic, minced
- 1 to 2 hot chile peppers, chopped (optional)
- 3 Tbsp. chili powder
- 1 1/2 Tbsp. cumin
- 1 tsp. salt
- 1 tsp. coriander
- 1 large can crushed tomatoes
- Put aside beans and liquid.
- Squeeze water from tofu and tear in pieces.
- Combine next 7 ingredients in bowl.
- Add to this tofu pieces and mix until coated.
- Then fry tofu mixture in 1/4 cup oil over medium heat until all liquid is cooked out and tofu browned.
