Banana Snack Muffins Recipe
- 3/4 c. all-purpose flour
- 1/2 c. whole wheat flour
- 1 1/2 tsp baking pwdr
- 1/4 tsp salt
- 1/2 c. sugar
- 3 Tbsp. butter or possibly margarine softened
- 3/4 c. banana (about 1 large)
- 8 ounce lowfat vanilla yogurt
- 2 x egg whites
- 1 Tbsp. sugar
- 2 tsp finely minced walnuts
- 1/4 tsp nutmeg
- 1.
- Heat oven to 375F.
- Spray bottoms only of 12 muffin c. with nonstick cooking spray.
- 2.
- Lightly spoon flour into measuring c.; level off.
- In large bowl, combine all purpose flour, whole wheat flour, baking pwdr and salt; mix well.
- 3.
- In medium bowl, combine 1/2 c. sugar and margarine; beat at low speed till well blended.
- Add in banana, yogurt and egg whites; beat well.
- Add in to flour mix.
- With spoon, stir just till dry ingredients are moistened.
- Spoon batter proportionately into sprayed muffin c..

- In small bowl, combine all topping ingredients; mix well.
- Sprinkle proportionately over batter in pan.
- 5.
- Bake at 375F for 20 to 25 min or possibly till toothpick inserted in center comes out clean.
- Immediately remove from pan.
- Cold slightly.
- Serve hot.
