Parmesan crusted chicken alfredo

  1. bring a large pot of salted water to a boil.
  2. mean while trim all fat and skin from chicken breasts then cut in half so there are 6 portions
  3. season flour with salt and pepper
  4. dredge chicken in flour then beaten eggs and finally breadcrumbs
  5. heat oil in a large frying pan and sear the breasts on both sides
  6. in a medium sauce pot melt butter on medium heat when butter is melted add all but 2tbs of grated Parm.and then add one pint of lite cream.
  7. meanwhile heat oven to 400
  8. bring Alfredo to a boil and reduce to a simmer stirring often.
  9. add 1tbs gran.
  10. garlic and season with salt and pepper * if sauce does not thicken make a corn starch slurry to thicken*
  11. in a bowl mix mayo the rest of the parm , onion powder, gran.
  12. garlic.
  13. and Italian seasoning .salt and pepper tt
  14. spread the mayo mixture on one side of each chicken breast .place on a sheet pan and cook for 10 min or until done
  15. strain and mix pasta in the Alfredo sauce.
  16. by this time the chicken should be done place chicken on top of pasta and enjoy
