Noodles Florentine
- 1 (8 oz.) pkg. egg noodles
- 1/4 c. butter or margarine
- 1/4 c. all-purpose flour
- 1/2 tsp. salt
- 2 c. milk
- 2 c. shredded Cheddar cheese (8 oz.)
- 1 (10 oz.) pkg. frozen chopped spinach, cooked and well drained
- 1 (4 oz.) can sliced mushrooms, drained
- buttered bread crumbs
- Preheat oven to 350u0b0.
- Cook noodles according to package directions.
- In medium saucepan, melt butter and stir in flour and salt, blended with milk.
- Bring to the boiling point, then simmer, stirring constantly, until sauce is thickened, about 5 minutes. Stir in cheese, stirring constantly, until melted.
- In greased 2-quart oblong baking dish, layer 1/2 the noodles, then spinach, mushrooms and 1/2 sauce.
- Top with remaining noodles and sauce; sprinkle with bread crumbs.
- Bake for 25 minutes, or until bubbling.
- Makes about 8 side dish servings.
