Sweet Potato Pie
- 3 to 4 large sweet potatoes (about 2 1/4 lb.)
- 1/2 c. butter, softened
- 2 c. sugar
- 4 eggs
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
- 1 (13 oz.) can Pet milk
- 3 (9-inch) frozen regular pie crusts or 2 deep dish pie crusts
- Cook sweet potatoes in boiling water until fork easily pierces potatoes.
- Cool slightly.
- Remove skins.
- Place cooked and peeled potatoes in large mixing bowl.
- Mix with mixer until smooth.
- There should be about 3 1/2 cups mashed potatoes.
- Stir in butter and sugar.
- Beat in eggs, one at a time.
- Mix in nutmeg, salt and Pet milk.
- Pour into unbaked pie crusts.
- Place on cookie sheet.
- Bake in 425u0b0 oven for 20 minutes.
- Lower heat to 325u0b0.
- Bake 30 to 45 minutes longer or until inserted knife comes out clean.
