Hillbilly Potato Salad
- 6 cups Mashed Potatoes
- 2 cups Mayonnaise
- 1 stalk Green Onion
- 1 cup Sweet Pickle Relish Or Diced Sweet Pickles
- 4 whole Hard Cooked Eggs (optional)
- 3/4 cups Yellow Mustard
- 2 teaspoons Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Paprika
- In a bowl, combine mashed potatoes (hot or cold) and mayonnaise and mix till combined.
- Slice green onion into 1/8-inch slices and add to mix.
- Add remaining ingredients and mix thoroughly.
- If adding eggs, chop 3 eggs and mix into salad.
- Transfer to serving bowl and top with remaining hard boiled egg (sliced) and paprika.
