Ginger Shrimp and Green Beans
- 1 lb. cleaned medium shrimp
- 1/2 lb. green beans, trimmed, cut into 2-inch lengths
- 1 Tbsp. minced peeled gingerroot
- 2 tsp. grated lemon zest Safeway 4 ct For $5.00 thru 02/09
- 1 red chili pepper, seeded, finely chopped
- 2 Tbsp. butter or margarine
- 6 oz. VELVEETA, cut up
- 2 Tbsp. milk
- 6 oz. angel hair pasta, cooked, drained
- Cook and stir shrimp, beans, gingerroot, lemon zest and peppers in butter in large skillet on medium heat 3 to 5 min.
- or until shrimp turn pink.
- Reduce heat to low.
- Add VELVEETA and milk; cook until VELVEETA is completely melted, stirring frequently.
- Spoon over the hot pasta.
