Nana Jana's Spaghetti and Meatballs

  1. For meatballs: combine meatball ingredients and form into 2 inch balls.
  2. Brown in large pot in olive/veg oil combination.
  3. Brown in small batches until brown on all side.
  4. Place in paper towel lined bowl to rest.
  5. When finished with meatballs -- add a small amount more of olive oil if needed to bottom of same pan.
  6. BROWN celery, onion, and garlic in the remains of the browned meatball oil.
  7. Take it to the almost burned stage!
  8. Add tomato puree and crushed tomatoes.
  9. Lightly rinse cans and add that liquid to sauce.
  10. Bring to a simmer.
  11. Add Salt and brown sugar.
  12. Return Meatballs to sauce and simmer 1 hour.
  13. Serve over hot spaghetti and top with Asiago grated cheese.
  14. Hot crusty bread on the side.
  15. My family and friends love this all year round.
  16. A true comfort meal!
