Orange Grove Salad from the Plaza Hotel
- 6 oranges
- 6 grapefruits
- 1 head lettuce, bibb or boston
- 12 cup coarsely chopped pecans
- 1 12 cups Hellmann's mayonnaise
- 14 cup orange juice
- 18 teaspoon baker's superfine sugar
- 1 teaspoon grated lemon rind
- Peel the oranges and grapefruit.
- Reserve 4 half shells of the grapefruits.
- Use a sharp knife to section both fruits.
- Line the grapefruit half-shells with lettuce leaves and fill with alternating sections of grapefruit and orange.
- Sprinkle each salad with chopped nuts.
- Serve with Citrus Mayonnaise on the side.
- For Citrus Mayonnaise: stir ingredients together and chill until ready to use.
- You can put this in the freezer for 15 minutes to chill faster.
