Vegetarian Pasta Primavera
- 3/4 lb. fresh asparagus, cut
- 2 1/2 c. broccoli flowerets
- 1 onion, chopped
- 2 garlic cloves, chopped
- 2 carrots, scraped and sliced
- 1 sweet red pepper, chopped
- 1 sweet yellow pepper, chopped
- 1 c. whipping cream
- 1 c. vegetable broth
- 4 green onions, chopped
- 2 tsp. basil
- 1/2 tsp. salt
- 8 oz. linguine or thin spaghetti
- 1/2 lb. fresh mushrooms, sliced
- 1 c. grated Parmesan cheese
- 1/4 tsp. ground black pepper
- Steam broccoli and asparagus for 6 to 8 minutes.
- Remove from heat and set aside.
- Saute onion and garlic in oil in a large pan until tender.
- Add carrots and chopped peppers to onion mixture and saute until crisp-tender.
- Remove from heat and drain.
