B'S Pumpkin Bread

  1. Soak raisins in hot apple juice (juice can be simmered in mulled wine spices for 15 minutes; strain and add raisins). Combine sugar, oil and eggs; add pumpkin and mix well.
  2. Combine dry ingredients; add to pumpkin mix.
  3. Add milk and vanilla and beat thoroughly.
  4. Add pecans and raisins and mix well.
  5. Pour into 2 greased 9 x 5 x 3-inch loaf pans.
  6. Bake at 350u0b0 for 1 hour. Serve with cream cheese; also good toasted.
