Country Garden Primavera
- 1-1/2 zucchini, cut into matchlike sticks (about 3 cups)
- 2 cups cauliflower florets Safeway 1 lb For $1.99 thru 02/09
- 2 tsp. oil
- 2 cups penne pasta, cooked, drained
- 1-1/2 cups halved cherry tomatoes
- 1 tsp. dried basil leaves, crushed
- 165 g Velveeta Process Cheese Product, cut up (about 1 cup)
- Cook and stir zucchini and cauliflower in hot oil in large nonstick skillet on medium heat until vegetables are crisp-tender.
- Add pasta, tomatoes and basil; mix lightly.
- Cook until heated through, stirring occasionally.
- Stir in Velveeta; cook until Velveeta is completely melted and mixture is well blended, stirring occasionally.
