Grilled Vegetable and Goat Cheese Roulade

  1. Lightly grill eggplant, squash and zucchini.
  2. Blacken peppers on grill, place in paper bag for a few minutes, then remove the blackened skin, seeds and slice.
  3. On a sheet of plastic wrap layer eggplant, zucchini, squash and peppers.
  4. Mix goat cheese and sour cream and spread a thin layer on top of vegetables.
  5. Roll.
  6. Refrigerate for up to two hours.
  7. To serve, slice into 1/4 inch pieces.
