Seafood Fiesta Recipe
- 1/3 pound flounder
- 1/3 pound scallops
- 1/3 pound shrimp
- 1/3 teaspoon white pepper
- 1 lg. tomato, diced
- 1 onion, diced
- 1 lime
- 1 tbsp. oil
- 1 tbsp. minced parsley
- 1/4 c. white wine
- Preheat oven to 375 degrees.
- In an ungreased 8 x 8 x 2 inch cooking dish place seafood.
- Sprinkle with white pepper.
- Top with diced tomato and onion.
- Add in wine.
- Squeeze fresh lime on top and add in oil.
- Sprinkle with parsley.
- Cover and bake 15-20 min.
