Mug 'o Pumpkin Creme
- 7 ounces light vanilla soymilk
- 2 tablespoons canned pumpkin puree
- 14 teaspoon cornstarch
- 14 teaspoon pumpkin pie spice
- 14 teaspoon vanilla extract
- sugar substitute, to taste
- Combine all ingredients, except the sweetener, in a small pot.
- Stir well.
- Bring to a boil, stirring constantly.
- Once mixture begins to froth, continue to boil for 1 minute.
- Remove from heat and pour into a mug.
- Allow to cool slightly.
- Sweeten, to taste, with your sugar substitute of choice and enjoy!
