Buffalo Blue Sandwich
- 2 cups skinned, boned, shredded deli rotisserie chicken
- 3/4 cup chopped celery
- 1/4 cup Buffalo wing sauce
- 1 (1-pound) loaf French bread
- 1/4 cup Land O Lakes Butter, softened
- 1/3 cup blue cheese salad dressing
- 8 (3/4-ounce) slices Land O Lakes Deli White American, cut in half
- Combine shredded chicken, celery and Buffalo wing sauce in bowl; set aside.
- Cut 16 (1/2-inch) slices from French bread.
- (Use remaining bread as you wish.)
- Butter 1 side of each bread slice.
- Spread about 1 teaspoon salad dressing onto other side of each bread slice.
- Place 1 piece cheese over dressing on 8 bread slices; top with 1/3 cup chicken mixture, 1 piece cheese and remaining bread slices, buttered-side up.
- Heat panini grill.
- Place sandwiches into panini grill.
- Grill 6-8 minutes or until bread is golden brown and cheese is melted.
- Repeat with remaining sandwiches.
