Vivid Pancake Mix & Carrot Cheese Scones
- 1 Carrot
- 200 grams Pancake mix
- 50 grams Butter (unsalted)
- 1 tbsp Lemon juice (bottled is fine)
- 50 grams Cream cheese
- Place the butter on top of the pancake mix and heat for 30-60 seconds in a microwave until soft.
- Stir with a rubber spatula and the mixture should become crumbly.
- Add the grated carrot and lemon juice and give everythng a quick mix.
- Then add the cream cheese, cut into 5 mm cubes, and fold in.
- Separate the mixture into 8 equal portions and drop onto a baking tray lined with baking paper.
- Flatten each portion out until around 2 cm thick.
- Bake for 25 minutes in an oven preheated to 170C and they're done.
