Bessie'S Holiday Cake
- 1 c. shortening
- 4 c. sugar
- 4 eggs
- 1 Tbsp. vanilla, almond or lemon extract
- 6 c. flour
- 2 tsp. nutmeg
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 or 4 c. nuts
- 1 or 2 c. candied fruit or gum drops
- 4 c. unsweetened applesauce
- 4 tsp. soda
- 1/4 c. hot water
- 2 large bowls
- large paper sack, No. 1
- In the first bowl, cream together sugar, shortening and eggs. In second bowl, place applesauce, add soda to the hot water and mix into applesauce (use big bowl).
- In large paper sack, place 1 cup of flour, add the raisins, candied fruit, gum drops and nuts. Shake to coat the fruits and nuts.
- Add 1/3 of the applesauce mixture and 1/3 flour, fruit and nut mixture to the creamed mixture.
- Mix very well.
- Add second 1/3 of the applesauce mixture and 2nd 1/3 of flour fruit nut mixture to the creamed mixture. Mix very well.
