Braised Chicken Over Couscous
- 1 Tbsp. seasoned breadcrumbs
- 2 boneless skinned chicken thighs
- vegetable cooking spray
- 1 tsp. olive oil
- 1/2 c. chopped onion
- 1/2 c. diced carrot
- 1/2 c. diced celery
- 2 Tbsp. water
- 1 c. diced tomatoes
- 1/2 tsp. grated orange rind
- 1/4 tsp. dried rosemary
- 1/8 tsp. salt
- 1/8 tsp. pepper
- 1 clove garlic, crushed
- 2 c. couscous
- Place breadcrumbs in a shallow dish; dredge chicken in breadcrumbs and set aside.
- Coat a nonstick skillet with cooking spray.
- Add oil.
- Place over medium heat until hot.
- Add chicken. Cook 3 minutes on each side or until browned.
- Remove chicken from skillet; set aside.
- Keep warm.
- Add onion and next 3 ingredients.
- Cook over medium heat for 5 minutes.
- Add tomatoes and next 5 ingredients, stirring well.
- Return chicken to skillet. Cover; reduce heat.
- Simmer 20 minutes or until chicken is done. Serve over couscous.
