Healthy Monkfish Tortillas Recipe
- 1/2 pound monkfish
- Sugar peas
- Onion (pref. Walla Walla Sweet)
- Peppers - green, red &/or possibly yellow
- Carrots
- butter
- Fresh lemon juice
- Jar plum sauce
- Purchase amounts of vegetables to feed number of people dining.
- Slice all vegetables to stir-fry.
- Heat butter (or possibly butter) in stir fry pan.
- Stir fry all vegetables till crisp, add in lemon juice over vegetables, set aside, keeping them warm.
- Cut monk fish into strips and also saute/fry in butter and lemon juice.
- Heat tortillas.
- Add in vegetables to monkfish, toss and you are ready.
- Place mix in tortillas with plum sauce and roll tortilla.
