Seafood Newburg

  1. Melt butter in a large saucepan over moderate heat.
  2. Add the onion and saute, stirring occasionally, for 5 minutes or until limp.
  3. Add the potatoes, salt and pepper.
  4. Cook, stirring, for 1 minute.
  5. Add the stock, cover and simmer for 5 minutes.
  6. Add the vegetables, cover and simmer for 5 minutes.
