Diabetic Smoked Mackerel Pate
- 8 oz. mackerel fillets, smoked
- 1/2 cup skimmed milk soft cheese,
- low-fat soft cheese
- Lemon juice, to taste
- Salt, to taste
- Black pepper, freshly ground, to taste
- Flake the fish into a bowl.
- Add the soft cheese and lemon juice and season to taste.
- Mix the ingredients together well by hand or process in a blender.
- Put the pate into a serving dish and chill until needed.
- Serve with melba toast.
