Sugar-Free Fruit Salad
- 1 large and 1 small sugar-free vanilla pudding (not the instant) Jell-O
- 4 c. sugar-free pineapple juice
- 2 cans sugar-free chunk pineapple
- 5 oranges, diced up (about the size of the pineapple)
- 6 bananas, sliced
- 1 qt. strawberries (save some for the decoration on the top)
- 3 c. yellow muskmelon, balled or diced
- 3 c. green muskmelon, balled or diced
- blueberries
- 8 kiwi, sliced and cut in half
- orange slices, kiwi and strawberries, cut in halves (to decorate the top)
- Mix pineapple juice and pudding.
- Cook until it is thick.
- Set aside and let cool. Add all the other fruit together while pudding is cooling. The pudding makes a glaze so the fruit does not turn dark, even after several days.
- This can be made with regular Jell-O pudding if you aren't watching your sugar.
- Very good. This is excellent for picnics and large crowds.
