Pork with Asian Greens

  1. Combine pork, half the dressing, spring onions and ginger in a shallow dish, cover and marinate for 20 minutes.
  2. Heat oil in a wok over medium - high heat, add pork fillet and cook for 4-5 minutes each side to brown.
  3. Place pork on a lined oven tray and bake at 180C for 10-15 minutes (depending upon fillet thickness) until pork is cook.
  4. Allow to rest 5 minutes before slicing into thick pieces.
  5. Add vegetables to the wok and stirfry 2 minutes until just wilted and tender.
  6. Add stock, cornflour, remaining marinade and dressing to the wok and bring to the boil.
  7. Serve sliced pork with vegetables, sauce and rice.
