Pork with Asian Greens
- 500g pork fillet, trimmed of excess fat
- 1/3 cup KRAFT FREE Honey Soy Dressing
- 2 spring onions, finely chopped
- 2 teaspoons grated ginger
- 2 teaspoons canola oil
- 1 bunch bok choy, cut into lengths
- 1 bunch broccolini, trimmed
- 100g snow peas, trimmed
- 3/4 cup reduced salt chicken stock, combined with
- 1 teaspoon cornflour
- 1 cup basmati rice, cooked to pack directions
- Combine pork, half the dressing, spring onions and ginger in a shallow dish, cover and marinate for 20 minutes.
- Heat oil in a wok over medium - high heat, add pork fillet and cook for 4-5 minutes each side to brown.
- Place pork on a lined oven tray and bake at 180C for 10-15 minutes (depending upon fillet thickness) until pork is cook.
- Allow to rest 5 minutes before slicing into thick pieces.
- Add vegetables to the wok and stirfry 2 minutes until just wilted and tender.
- Add stock, cornflour, remaining marinade and dressing to the wok and bring to the boil.
- Serve sliced pork with vegetables, sauce and rice.
