Cheesy Ham Omelette

  1. MELT half the butter in a frypan and cook the mushrooms.
  2. Remove and keep warm.
  3. BEAT the eggs with the seasonings.
  4. Melt half the remaining butter in the pan, add half the egg mixture and cook until almost cooked through.
  5. Top with some spinach, ham, mushrooms and cheese.
  6. Fold in half and keep warm.
  7. Repeat with remaining ingredients to make the second omelette.
  8. PLACE omelettes on serving plates with toast and roast tomatoes.
  9. Serve immediately.
