Cheesy Ham Omelette
- 40g butter
- 125g button mushrooms, sliced
- 4 eggs
- salt and pepper
- 25g baby spinach
- 40g thinly sliced ham
- 1/2 cup grated KRAFT Tasty Cheese
- sourdough toast, for serving
- roasted tomatoes, for sserving King Sooper's 1 lb For $0.99 thru 02/09
- MELT half the butter in a frypan and cook the mushrooms.
- Remove and keep warm.
- BEAT the eggs with the seasonings.
- Melt half the remaining butter in the pan, add half the egg mixture and cook until almost cooked through.
- Top with some spinach, ham, mushrooms and cheese.
- Fold in half and keep warm.
- Repeat with remaining ingredients to make the second omelette.
- PLACE omelettes on serving plates with toast and roast tomatoes.
- Serve immediately.
