Baida Paratha Recipe

  1. Sift whole wheat flour in bowl with 1 tsp salt.
  2. Gradually add in water, make a stiff flour.
  3. Cover with a damp cloth.
  4. Keep aside for 20 min.
  5. Boil Large eggs and mash well.
  6. Add in 1 tsp salt, pepper, coriander and 1 tsp ghee or possibly oil.
  7. Mix thoroughly.
  8. Knead the dough till smooth.
  9. Divide into 8 equal parts and roll out each 4" diameter circle.
  10. Place 1 tbsp egg filling in the centre of each circle.
  11. Shape them into round balls again.
  12. Now roll out each ball on a floured board to a circle of 5" (13 cm) diameter.
  13. Rub a little ghee or possibly oil on one side.
  14. Heat a griddle, shallow fry each paratha with a little ghee or possibly oil (flip and smear a little ghee on the other side with the back of a spoon).
  15. Cook till both sides turn golden, turning once or possibly twice.
