Wild Blueberry Pancakes
- 1 cup all purpose flour
- 1 tbsp granulated sugar
- 1 1/4 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 2 eggs
- 1 cup sour cream or half n half
- 1/2 cup milk
- 1 cup whole fresh bluberries
- 1 vegetable oil
- combine flour, sugar,baking powder,baking soda and salt into a large mixing bowl.
- set aside.
- in a seperate smaller bowl beat eggs, sour cream and milk together.
- add this mix to your flour mixture and beat until smooth.
- heat frying pan or griddle pan over medium heat.
- lightly coat with oil.
- pour 1/2 cup of batter onto griddle pan and spread batter to make about a 5 inch circle.
- sprinkle some bluberries on top.
- when pancake begins to bubble and edges lose their wet and shiny appearance (about 1 minute) flip pancake.
- cook second side until cooked through.
- (about 1 minute).
- continue until all batter and blueberries r used.
- serve warm with butter and syrup or whipped cream.
