Apple Cranberry Cobbler Muffins

  1. Mix cereal packets and buttermilk in small bowl; let stand 15 minutes.
  2. Mix flour, baking soda, baking powder, cinnamon and salt in another small bowl; set aside.
  3. Blend eggs and brown sugar in large bowl; stir in buttermilk mixture and melted margarine or butter.
  4. Stir in flour mixture until combined.
  5. Mixture may be lumpy.
  6. Spoon batter into 12 paper-lined 2 1/2-inch muffin-pan cups.
  7. Bake at 375F for 15 to 20 minutes or until toothpick inserted in center comes out clean.
  8. Serve warm.
