Apple Cranberry Cobbler Muffins
- 3 packets
- 1 cup buttermilk
- 1 cup flour
- 3/4 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. ground cinnamon
- 1/4 tsp. salt
- 2 each egg
- 1/3 cup brown sugar
- 6 Tbsp. margarine or butter
- Mix cereal packets and buttermilk in small bowl; let stand 15 minutes.
- Mix flour, baking soda, baking powder, cinnamon and salt in another small bowl; set aside.
- Blend eggs and brown sugar in large bowl; stir in buttermilk mixture and melted margarine or butter.
- Stir in flour mixture until combined.
- Mixture may be lumpy.
- Spoon batter into 12 paper-lined 2 1/2-inch muffin-pan cups.
- Bake at 375F for 15 to 20 minutes or until toothpick inserted in center comes out clean.
- Serve warm.
