BBQ Shrimp and Cheesy Grits

  1. Spicy Jalapeno BBQ Sauce: Mix ingredients in saucepan.
  2. Bring to boil on medium heat, stirring frequently.
  3. Reduce heat to low; simmer 2 min.
  4. Remove from heat.
  5. Cheesy Grits: Saute onions in hot oil in large saucepan 2 to 3 min.
  6. or until lightly browned.
  7. Stir in water; bring to boil.
  8. Gradually add grits in steady stream, stirring constantly; cook and stir 4 min.
  9. or until thickened.
  10. Stir in remaining ingredients; cook until cheese is completely melted and mixture is well blended, stirring frequently.
  11. Keep warm.
  12. Shrimp: Season shrimp with salt and black pepper.
  13. Grill on medium-high heat 2 to 3 min.
  14. on each side or until shrimp turn pink.
  15. Toss with 3 cups of the Spicy Jalapeno BBQ Sauce (or toss with 3/4 cup of the Spicy Jalapeno BBQ Sauce for trial recipe).
  16. Keep warm.
  17. For each serving: Spoon 2/3 cup Cheesy Grits into bowl; top with 2 Tbsp.
  18. of the remaining Spicy Jalapeno BBQ Sauce, 5 Shrimp, 1 Tbsp.
  19. corn, 1 tsp.
  20. each poblano peppers and parsley, and 1/2 tsp.
  21. red peppers.
