Mexican Chicken Casserole
- 1 large hen, boiled and cut into bite size pieces
- 1 1/2 c. chopped onion
- 1 1/2 c. chopped celery
- 1 c. green bell peppers
- 1 clove garlic
- 2 cans Italian tomato paste
- red pepper
- chili pepper
- Worcestershire sauce
- 1 can ripe olives
- 1 can mushrooms
- 1 can pimento, chopped
- 10 or 12 oz. noodles
- Steam vegetables in
- broth
- or
- fat
- until
- tender; add tomato paste,
- red pepper, chili pepper, Worcestershire sauce, olives, mushrooms and
- pimento
- to
- chicken.
- Cook
- noodles in broth until tender.
- Mix carefully with other mixture.
- If too dry, add water, broth or tomato sauce.
- Serve with green salad and garlic bread.
