Sweet Peas and Spinach

  1. In a large saute pan, heat 1 tablespoon of olive oil.
  2. Add scallions and saute for about 2 minutes.
  3. Add the remainder of oil and 1 teaspoon of butter.
  4. Add the peas and continue cooking for a few minutes.
  5. Add the wine and bring to a boil.
  6. Reduce to a simmer.
  7. Add spinach and cook until it is wilted.
  8. Add rest of butter and season to taste.
