Green Mango with Salt and Lime

  1. Cut the mangoes flush against the pit on each side.
  2. (Reserve any leftover mango for chutney or another recipe.)
  3. With a small sharp paring knife, score the fruit in a grid pattern, do not pierce the skin.
  4. When eating the fruit, push the skin up in the center.
  5. Squeeze the lime juice over and sprinkle with salt.
  6. Eat with your hands.
