Yule Pudding
- 1/4 c. shortening
- 1 tsp. cinnamon
- 1 tsp. mace
- 1/2 tsp. cloves
- 1/2 tsp. allspice
- 1/2 tsp. salt
- 1/2 tsp. molasses
- 1/2 c. brown sugar
- 1/2 tsp. grated lemon peel
- 1 tsp. grated orange peel
- 2 eggs
- 1 c. grated carrots
- 1/2 c. peeled, chopped apples
- 1 Tbsp. lemon juice
- 1 3/4 c. flour
- 1 1/2 tsp. baking powder
- 1 tsp. soda
- 1/2 c. milk
- 1/2 c. currants
- 1/2 c. nuts
- Cream shortening, spices, peels, molasses, salt and sugar. Add eggs and beat well.
- Add carrots, apples and lemon juice. Sift flour with baking powder and soda.
- Add to creamed mixture with milk.
- Add currants and nuts.
- Mix well.
- Fill well-greased pudding mold 2/3 full.
- Cover and steam for 2 hours.
- Serve warm with Fluffy Hard Sauce.
