Grandaddy's Crab Cakes
- 2 eggs
- 2 teaspoons mayonnaise
- 1 teaspoon horseradish
- 1 teaspoon snipped parsley
- 1 teaspoon lemon juice
- 1 14 cups fine breadcrumbs
- 1 teaspoon prepared mustard
- 12 ounces crabmeat
- 3 tablespoons oil
- salt
- pepper
- Combine all ingredients except 1/4 cup breadcrumbs, blend well.
- Shape into 1/2 inch thick patties.
- Coat with remaining crumbs.
- Chill 30 minutes.
- Heat oil in skillet.
- Fry until brown.
- NOTE: I have also cooked these in the oven for about 20 minutes on each side and they were just as good.
- NOTE: I have frozen these before cooking and they are still great.
