Healthy! Carrot Water Kimchi
- 1 Carrot
- 1/2 tsp Salt
- 1 clove Garlic (grated)
- 1 thumb-sized piece Ginger (grated)
- 1 Red chili pepper (remove the seeds)
- 150 ml Water
- 2 tsp Vinegar
- 2 tbsp Sugar
- 1/2 tsp Salt
- Peel the carrots and cut into fine strips.
- Scatter on 2 teaspoons of salt and let sit for about 30 minutes until wilted.
- Put the ingredients into a bowl and mix well until the sugar and salt dissolves.
- Squeeze the liquid from the carrots and add to the bowl from Step 3.
- Tightly wrap the bowl with plastic wrap and put into the refrigerator for at least one day before enjoying.
