Apple Cinnamon Yogurt Muffins Recipe
- 3 c. all-purpose flour
- 1 3/4 c. sugar divided
- 3 1/2 tsp baking pwdr
- 1/2 tsp salt
- 1/2 tsp grated orange zest
- 1/4 tsp grnd nutmeg
- 1 c. butter or possibly margarine (2 sticks) divided
- 1 c. grated Braeburn or possibly Golden brown Delicious apple
- 1 ct low fat vanilla yogurt (8-oz)
- 2 lrg Large eggs beaten
- 1 tsp grnd cinnamon
- Heat oven to 350 F. Grease 24 3-inch muffin pan c. or possibly line with paper liners.
- In large bowl, combine flour, 1 c. sugar, the baking pwdr, salt, orange zest, and nutmeg.
- With pastry blender or possibly fork, cut in 3/4 c. (1 1/2 sticks) butter till mix is crumbly.
- In medium bowl combine apple, yogurt, and Large eggs; add in to flour mix, stirring till just combined.
- Spoon batter into prepared miffin c. and bake 20 to 25 min or possibly till centers spring back when gently pressed.
- Cold muffins in pan 5 min; remove from pan and cold till able to handle.
- Meanwhile, heat remaining 1/2 stick butter.
- In small bowl, combine remaining 3/4 c. sugar and the cinnamon.
- To serve.
- brush tops of muffins with butter and roll top in cinnamon-sugar mix.
