Gingerbread
- 1/2 c. butter
- 2/3 c. brown sugar
- 1/2 c. warm milk
- 2 tsp. powdered ginger
- 1/4 heaping tsp. cinnamon
- 1/4 tsp. mace
- 1 c. molasses
- 4 tsp. brandy or coffee
- 3 eggs
- 3 c. flour
- 1 tsp. cream of tartar
- juice or grated rind of 1 orange
- 1 tsp. baking soda
- 1 c. seeded raisins, soaked overnight in brandy or water and drained
- Cream the butter and brown sugar with paddle.
- Add the warm milk.
- Mix all spices together and add to butter and sugar mixture.
- Mix in all other ingredients.
- Pour into a prepared 9 x 13-inch pan.
- Bake at 350u0b0 for about 30 or 40 minutes or until a toothpick inserted in the center comes out clean.
