Joy'S Chocolate Caramel Apples On-A-Stick
- 4 to 5 apples (2 1/2 to 3-inches in diameter)
- 1 c. brown sugar
- 1/4 c. white corn syrup
- 1/4 c. milk
- 1 to 2 sq. bitter chocolate
- dash of salt
- 2 Tbsp. butter
- 1/2 c. shredded coconut, chopped nuts or peanuts (optional)
- 1 1/2 c. sugar
- 3 egg yolks
- 1 c. vegetable oil
- 2 1/2 tsp. hot water
- 1 1/2 c. all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 1 tsp. cinnamon
- 1 c. grated carrots
- 1 c. chopped black walnuts*
- 3 egg whites
- Beat together the sugar, egg yolks and oil along with the hot water.
- Sift together the flour, baking powder, baking soda, salt, nutmeg and cinnamon.
- Add to egg yolk mixture.
- Then add carrots and walnuts.
- Beat egg whites until stiff; gently fold into mixture.
- Bake in preheated 350u0b0 oven in a well-greased tube pan for about 55 minutes.
- Let cool for 10 minutes before removing from pan.
