Creamy & Cool COFFEE Pie!

  1. Soften the gelatin in the water for 5 minutes.
  2. Beat the egg yolks until light.
  3. Gradually,add in the 1/2 cup sugar,continue beating.
  4. Slowly,add the coffee and salt.
  5. Cook over boiling water for 5 minutes,stir constantly.
  6. Add the gelatin,and stir until it has dissolved.
  7. Refridgerate until the mixture has thickened.
  8. Beat egg whites until stiff,gradually add remaining sugar& vanilla extract.
  9. Beat well,then pour into gelatin mixture.
  10. Pour into the pie crust,refridgerating until firm.
  11. Cover pie with whipped cream,and enjoy.
